Baked Oatmeal
Prep Time: 15 Min Bake Time: 40-50 Min

3 cups Oats

1 cup milk (Almond, soy, coconut, or regular)
1 cup brown sugar
2 eggs (Vegan: Substitute 1.5 bananas smashed)
1/2 cup applesauce
2 t baking powder
2 t cinnamon
1 t salt
2 t vanilla extract
Roughly 3 cups Fruit (apple, banana, peach, mango, berries, etc. Fresh or frozen)

Combine all ingredients together then add in fruit. Mix well to get a consistent batter. Place mixture in a 9x13 baking dish. Bake at 350 degrees for 40-50 (50-55 if fruit is frozen) minutes until top begins to brown or center is thoroughly warmed. 


Mexican Casserole
Prep Time: 15 Min Bake Time: 30-40 Min

1 can or 16 oz black or pinto beans

1 can or 16 oz of corn
1 can or 16 oz of refried pinto beans
1 5 oz can of chiles
1 can or 16 oz of peas
16 oz of chorizo (vegan option: Trader Joe's Soy Chorizo)
1 T cumin
1 T onion powder
2 T garlic powder

Crumble Chorizo with fork in large mixing bowl. Add refried beans and chiles mix well. Add corn and beans without draining can and spices. Drain Peas, then add and mix together well. Place in baking dish (9 x 13 in clear baking pan). Bake at 350 degrees for 30-40 minutes until top begins to get darker or center is thoroughly warmed. 


Lemon Blueberry Cheesecake Cookies

Makes about 3 dozen cookies.
Prep Time: 30 min Chill Time: 30 min Bake Time: 10-14 Min per sheet 


1 cup unsalted butter, room temperature
1 cup granulated sugar
Zest of 1 lemon
3 tbsp lemon juice
2 eggs
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
3 cup flour
1 cup fresh blueberries


1/2 pkg cream cheese, cut into 1 tsp cubes


Preheat the oven to 350 degrees and position a rack in the center. Line your baking sheets with parchment paper and set them aside.


In a large bowl with an electric mixer cream together the butter and sugar until it's light and fluffy. Blend in the lemon zest, juice and eggs. Make sure to scrape off any bits of zest that stick to the mixer paddle.


In a separate bowl whisk together the baking soda, baking powder, salt and flour then mix it into the wet ingredients. Gently fold in the blueberries so as not to burst any. Refrigerate the dough for about 15 – 20 minutes to make it stiff enough to roll.


For each cookie, roll 1 heaping tbsp of dough into a ball then flatten it slightly into a disc shape. Place a 1 tsp cream cheese cube into the center and form the dough around it creating a ball again. Bake them for about 10 - 14 minutes until the edges brown slightly. Transfer them to a cooling rack and enjoy!

Whole Foods Black Bean Burgers Taken from Whole Foods (http://www.wholefoodsmarket.com/recipe/homemade-black-bean-burgers)

Prep Time: 30 min Cook Time: 10 Min 

1 can black beans

1 egg
1/2 yellow onion, chopped fine
1 cup whole wheat bread crumbs
1 t dried oregano
1 t basil
1/2 t garlic powder
Salt and pepper to taste
(Optional 1 T Sriracha for some kick, Lettuce, Tomato, Red Onion for toppings)

Put Beans in a large bowl and mash well with a fork. Add egg, yellow onion, bread crumbs, oregano, basil, garlic powder, salt, pepper, and hot sauce. Mix well to combine then shape in 6 patties.


Heat oil in a large skillet over medium heat. Flip only once. Cook until golden brown on both sides and cooked through (about 10 minutes).
